AV 2018 Graves Rouge
This Right Bank Bordeaux red blend of Graves is produced in vineyards that are flint rich yielding two heavy weight varietals that beautifully compliment each other. Cabernet Sauvignon offers blackberry/blackcurrant flavors which are skillfully blended with Merlot’s plummy goodness. Merlot will give the additional velvet and soft texture that are known from this region. It has been aged for 12 -14 months in new and old French barrels which impart slight woody and peppery notes with hints of vanilla and coconut. This is an earthy wine that pairs well with comfort foods including beef stews, beef wellington, peppered steak with sautéed mushrooms, gruyere cheese and dark chocolate. A chocolate cake with added Red Graves to both the cake mix and icing during preparation is absolutely delicious. This wine is ready to drink but cellaring it another 5 - 10 years will cause the tannins to soften.
