AV 2016 Grand Cru St. Emilion
This Left Bank Bordeaux red blend of St. Emilion is produced in vineyards that have underlying limestone with a rich clay loam top soil. Merlot is soft and supple allowing the Cab Franc to be structure the Merlot is draped upon. There are hints of underlying tobacco box and leather with larger notes of plum and blackcurrant. French oak creates the woodiness and a greenness that is reminiscent of dill and bell pepper. The optimal pairing is with a medium rare ribeye, venison sausage, and grilled bacon wrapped quail companied with a light raspberry sauce. For something a little different, try this wine with a mediterranean salad drenched in extra virgin olive oil and a superb herbed feta cheese. Easy to drink now and will continue to age beautifully for 7 - 10 more years.
